Michelle, I was watching a cooking show the other day and they made the following recipe. I turned around and made it with what I had on hand. The kids loved it and that made it bliss! Cheap and good.
Meatloaf Cupcakes
2 pounds hamburger
2 eggs
1/2 cup of potato chips crumbs (last part left in the bag)
1 cup of bread crumbs (had cheap hamburger buns that I browned and crumbled)
2 squirts of ketchup
Salt and pepper to taste
Good BBQ Sauce (I like Jack Daniels brand)
Preheat oven to 350. Mix all ingredients well; evenly distribute and press down in a 12-muffin pan. Bake for 15-20 minutes. Spoon about 1 tsp of BBQ sauce on each muffin and bake another 5 minutes or so. Enjoy.
Side note: The show had a mashed potato piped onto the top as well - haven't experimented with this yet!
