Crock Pot Pepperoncini Roast Beef
OK, so this is not my original recipe, but it is definitely a recipe worth sharing because it is so amazingly simple and versatile. Two ingredients - one beef roast (I used a 4 # roast), and one jar of pepperoncinis, 16 oz., undrained. Put the roast in the crock pot, cover with the pepperoncinis and cook on low for 6-8 hours (the longer the better, to me).
When the roast is done, it makes amazing sandwiches.
- Slice a large onion in half and then slice each half thinly. Toss in a pan with a little oil and sprinkle with a little sugar to caramelize.
- Slice or shred beef and place in hoagie rolls.
- Top beef with cheddar, pepper jack or provolone slices.
- Top all with onions and broil briefly.
You can also put the sliced beef over rice or potatoes with the delicious juice, or slice the meat to use in fajitas or enchiladas. The meat lasts really well in the fridge and freezes well, too, so you can get a lot of mileage for your money.
There are lots of more complicated variations on this recipe, but to me why mess with something that is already great?
