Graham Cracker Brittle
The recipe is so good, I don't know a single person who doesn't love it. It's delicious and only pennies to make.
1 pkg. (1 section) of graham crackers
1 stick margarine
1 c. pecans, chopped
1/2 c. sugar
1-1/4 sticks butter
1/2 tsp. vanilla
Arrange crackers in a single layer on a cookie sheet which has been covered in foil to prevent sticking. (I spray with a non-stick coating as additional insurance that there will be no sticking.) Sprinkle with pecans. Melt butter, margarine, sugar and vanilla together. Bring to a boil for 2 minutes. Pour over crackers. Bake at 350 degrees for 10 minutes. Cool for a few minutes then break into pieces. This makes a great gift and doesn't cost an arm and a leg.
(By the way, it is NECESSARY to have both the butter and the margarine; otherwise, it doesn't work right.)
