Simple Fruit Cobbler, Iron Skillet Cooking

Here's one that my mom always found a way to make during tough times. With this recipe it can be whatever you happen to have on hand that makes it special.

Simple Cobbler

If using fresh fruit, add 1/2 cup sugar to 2 to 3 cups fruit and slightly mash to release juices and let sit while continuing. You can also use anything left over, such as apple sauce, peaches, plums, apples that you really don't want to throw away but are to far gone to eat, cans of pie filling you might find on sale, pears your children picked from the neighbors tree, even ground cherries, etc...

Set oven temperature to 350 degrees. Put 1 stick butter into an iron skillet and put into oven to melt. (You don't use iron skillets? Just use a baking pan of choice. Takes about 5 minutes or so.)

Blend dry ingredients:
1 cup all purpose flour
(she only used King Arthur flour)
1 cup sugar
2 teaspoons baking powder

After blending well, make a slight well in the center of the dry ingredients.

Add:
1 teaspoon of vanilla extract
1 cup of milk

(Mom always used dry milk as it was more readily available. I found a dry cultured buttermilk mix that works great as well.)

Blend well.

Pour the melted butter from the iron skillet into the mixture.

Blend well.

Pour the entire batter into the iron skillet.

Pour the fruit of your choice into the middle of the batter.

Do not mix.

Put into the oven and bake for approximately 1 hour. It may take a little less time, check for doneness.

Your pocket book, your taste buds and your children will thank you!

Note from Michelle... Hi Carol! We are big cobbler fans, being from the south, and make it in large pans as well. Your recipe can be doubled to make larger quantities for church suppers so I'm listing it under this recipe index too!

Recipe Update: 2/14/09 After we posted this recipe we had a reader write in to say she had a little trouble; when she baked the cobbler it turned out to be only 1" thick. So after talking with her a bit I decided to make up a quick batch myself to check it out and I'm happy to report the recipe is quite delicious! The only thing I would do is cut back on the sugar in the dry ingredients to 3/4 cup, possibly even less. I took a bunch of pictures of the cobbler I made and hope y'all enjoy them! :o)

The batter should resemble pancake batter when you mix it up, I also used almost 3 cups of cut up fresh apples for our filling. I suspect that is what the original cook usually did when she made this cobbler. Other fillings used may produce a thinner final product. And when baking, always be sure your baking powder is not out of date!

I would also like to add that as with many recipes, cooking this cobbler in the skillet is fantastic!!! I have two iron skillets that I purchased new and seasoned myself when my husband and I first got married, 23 years ago. Actually, one is that old the other one I think I added later on as our family grew. Anyhow, it really makes the cobbler extra crispy and delicious. YUM!

This particular recipe is very sweet though; much sweeter than most cobblers. As I said earlier, I think it would be perfectly fine to cut back on the sugar a bit.

Ground Beef Curly Noodles (Ramen Noodles)

Ground Beef Curly Noodles

This is a quick and economical recipe I've posted on Allrecipes a few years ago and it's received pretty good feedback. Kids like it a lot. It's tasty as written, and it can be further spiced up as desired. Some like to double or triple the ramen noodles. It's really good the next day wrapped in a tortilla.

1 lb. ground beef
1 package ramen noodles (I use oriental flavored) with seasoning packet
1 can corn
1 can diced tomatoes

Brown ground beef over medium-high heat. Drain fat. Crush ramen noodles in their package to break them up slightly. Add noodles, seasoning packet, can of corn (undrained) and diced tomatoes (undrained). If using extra noodles add 1/2 cup water or broth for each package. Bring to a boil, reduce heat to low, cover. Stir occasionally to continue to break up noodles. Simmer for 10 minutes. Yields 4 servings.

Chocolate Gravy

Chocolate Gravy

3 Tablespoons cocoa
2 Tablespoons flour
Pinch of salt
3/4 cup sugar
1 1/2 cups milk
1 Teaspoon vanilla

Mix all the ingredients in a pan until cocoa and flour are smooth over medium heat. Add milk and stir until smooth and mixture thickens. You may have to add more flour, til it's gravy thickness.

Pour over hot, buttered biscuits. Sounds strange, but it's very tasty for breakfast. Kids LOVE it!

Taco Rice Skillet

Taco Rice Skillet

Brown:
1 pound ground beef, drain off fat

Add:
1 chopped onion
1 can stewed tomatoes
1 cup raw rice
1 pkg. taco seasoning
1 cup water
1 small can tomato sauce
1 can ranch style beans (optional)

Cook together until rice is tender.

Serve with grated cheese, chopped fresh tomatoes and shredded lettuce on top (optional).

I also love to add sour cream and picante sauce to my serving.

Thanksgiving Recipes and Surgery Update

Last month I had so wanted to share with you some great recipes for Thanksgiving but life doesn't always go the way we plan, as we all know. Not only was I recovering from major surgery but my laptop which I needed in order to be able to get online for any extended amount of time just completely quit on me. My husband tried for about 4 hours to repair it but finally we had to give in and send it in for warranty work. I have missed y'all and do hope you had a wonderful and Blessed Thanksgiving!

NEXT YEAR, I do hope we can all get together here and share our favorite frugal family recipes for Thanksgiving, I would really love that!

We had some exciting news on the cooking front in November! ABC News featured two of my Thanksgiving recipes on their web site and one of them was my mom's Sweet Potato casserole. I was just so excited to see her recipe featured and I know she was smiling up in heaven along with me! :-)

Now, I'm guessing y'all would like to know more about my surgery as I haven't really had a chance to keep you up to date. Everything just happened so fast it was a lot to deal with for me and my family and thankfully, I am okay and on the road to full recovery. Praise God!

To make a long story short... in early October, I was diagnosed with ovarian cancer. I was sent from dr. to dr. and had one test after another. Within just a few weeks my surgery was scheduled as quickly as possible with a GYN/Oncologist. Having just lost my mom to colon cancer last year and as a cancer survivor myself already, well you can just imagine what everyone was thinking, including my doctors.

However, God had other plans for me at this time! My surgery went very well and I am at home now recovering with my family taking good care of me. The tumor was removed along with a second one that didn't show up on the CT scans and the first and second pathology reports came back 100% cancer free! Meaning, there was no cancer! :o)

For most of this year I've been dealing with all the symptoms of ovarian cancer but I believe that was because I had a large tumor inside me that was causing the same problems whether it was cancer or not. At this time there are no sure tests to confirm ovarian cancer before surgery is performed and/or the tumor can be biopsied.

Please Note... If you have any changes in your health or digestive system that do not go away within a few days please talk to your doctor and do not put it off! Both my mom and I had regular dr. appointments that MISSED our health problems, and of course by the time her colon cancer was found it was too late. She died 31 days after she was finally diagnosed. I know it's just so easy for the days to turn into weeks and weeks turn into months and so on. But there are a lot of tests that can be done such as a painless CT scan to see if there is anything wrong inside of you, so don't be afraid, just call your dr. and make the appointment!

We are so very thankful that everything turned out okay and I am so glad to still be here with you! I hope you all have a wonderful holiday season with your loved ones!
