I have a new passion; making semi-homemade matzo ball soup! I used to make it over twenty years ago before my husband and I were married and my best friend was Jewish, which I guess inspired me to try new recipes like this... Sandra, where are you? I miss you!
So about my re-obsession with this wonderful soup, why, I don't know! Maybe it's because we are back in Atlanta and it's just a fond memory I have. Maybe it's because the cold weather is creeping up on us and I'm tired of every other soup we've been having for years on end and I just MISS matzo ball soup! Or, it could be because we recently went to the Marietta Diner and had THEIR matzo ball soup and I haven't stopped craving it since!
When I used to make matzo ball soup 25 years ago I would go to the store like most unaware gentile cooks and buy a box of "Matzo Ball Soup Mix!" Or do Jewish families use the boxes too? I don't know! I was just thrilled and happy to make my soup by the directions on the back of the box and eat it all up! That was then.
I have since learned that matzo ball soup can be MUCH BETTER!!!
The restaurant makes their matzo ball soup with vegetable soup, noodles and all! Oh my, it is so delicous I could eat it every day! And although I know there has to be more 'proper' (and cheaper) ways to make matzo ball soup I am still cheating by buying the box and using it to make the matzo balls. Then I put the matzo balls in our vegetable soup (4 cans of Lite-Progresso on sale is also great for us busy working moms, not as frugal as homemade but you MUST buy it on sale!) and oh my goodness, heaven on earth!
Also, I am experimenting with making the matzo balls with half veg. oil and half olive oil, not all veg. oil as the box says to do and they are better this way too!
What kind of soups do y'all like to make, and does anyone make homemade matzo ball soup, without the box? I cannot wait to make another batch, YUM!!!

Crock Pot Congressional Bean Soup with Ham

Hi Michelle, I enjoy your BetterBudgeting site and am a frequent reader. My family loves this soup and it is so easy and healthy. I even use less ham and it still turns out great!
Crock Pot Congressional Bean Soup
8 cups water
2 cups diced lean cooked ham
1 onion, finely chopped
1 tsp. salt
1 pound dried Navy beans
1 cup finely chopped celery
2 Tbsp. finely chopped parsley
1/4 tsp. pepper
In a large pot, bring water to a boil. Add beans (picked through), and boil gently 2 minutes. Turn off heat and let stand covered 1 hour. Pour all including water, into a slow cooker. Add remaining ingredients. Cover and cook on HIGH 6-7 hours until beans are very soft.

Speedy Meatless Lasagna
It's so filling you won't even notice the lack of meat, plus it freezes really well!
6 lasagna noodles (uncooked - I prefer whole wheat)
1 jar of marinara sauce OR 2 jars of pizza sauce
1 med. container of low fat cottage cheese
2 c. shredded Mozzarella cheese
2 tbsp of dried parsley
In the bottom of a 9x13 pan: place 3 uncooked noodles, 1/2 the sauce, all the cottage cheese and top with 1 c. of shredded cheese. Repeat, ending with shredded cheese. Sprinkle on parsley. Cover tightly with foil and put into a 400 degree pre-heated oven. Bake for 45 min. Remove foil and put oven on broil until cheese begins to brown. Serves 6

Salmon Patties & Gravy

Salmon Patties and Milk Gravy (Cost is about $4.00 to serve four adults.)
I use a can of Alaska wild salmon, I can buy one can for $1.89. Some stores charge $2.00 a can. Still a decent price for what you get. Stir in one egg for each can you use. I sprinkle in corn meal, maybe about half a cup. You want the mixture to hold together so you can spoon it into the hot skillet. Fry till golden brown on one side turn over and do the same on the other side. Drain in paper towel. If you like cream gravy you can sprinkle a little flour in the bottom of the skillet, about two tablespoons. If you have grease left over from the salmon patties that will work or you can use about four tablespoons of butter to mix with the flour. Stir till you like the color. Open a can of carnation cream (evap. milk), put in bowl, add the same amount of water as cream, mix. Pour this mixture into skillet with grease/butter and flour. Bring to a boil and stir often, should be thick within a few min's. Serve with Salmon patties. Very inexpensive dinner. Makes about seven to eight patties.
